cooking food makes a big mess

Therefore I substituted red onions, because I am an onion die-hard. Just kidding, it’s all I had on hand. You see internet, recently I have been making an effort to cook whole meals in an attempt to save even more pennies and avoid eating a turkey sandwich ever again. Boar’s Head be damned. However I seem to have a complete inability to actually purchase and have on hand at the same time ALL of the required items on the recipe list. I know there are people out there who have fully stocked spice cabinets and overflowing vegetable bins. But 2R, that is not. You would think that in such an ethnically diverse neighborhood as Astoria, Queens that one could readily and easily find curry powder. Someone should be selling it from a stand on the sidewalk for heaven’s sake, or giving away free samples at the bus stop. But no, three trips to three different stores that task took. Or maybe its just that I don’t know where to look for it, since the area I am most familiar with at the grocery store is the coffee aisle…

But I hear you saying: Beckie, just make a list! Beckie, why not take the recipe with you? Beckie, prep your vegetables ahead of time! Got it guys. Honestly, I was cooking things and became so flustered and confused I looked around and had no idea where I was. The ‘Rooms had to hand the eggs to me from the couch where I had set them (why?) and politely remind me that Ektorp was NOT a cooking surface. He promptly left, and just in time. It got worse, I was sauteing and chopping and boiling and grating, all of a sudden two hours had passed and I was pouring everything into a casserole dish so I could heat it up tomorrow. That’s right, I spent all of that time on something I couldn’t even eat the same day?! From now on I need more immediate gratification.

At this very moment I’m sitting in bed venting writing this (yes, its 8:30pm and I had to get in bed to calm my nerves) AND I JUST REALIZED I FORGOT TO ADD THE SPINACH IN, WHICH WAS THE WHOLE ENTIRE POINT OF MAKING THIS M-F*ING CASSEROLE BECAUSE I’M TRYING TO EAT THINGS THAT ARE GREEN AND GOOD FOR ME!?!?!?!??! Holy cow, I gotta go internet. Gonna sleep this off like too many cocktails and live to cook again tomorrow.

P.S. I gotta hand it to all the food bloggers out there. Cooking. Is. Hard. And you stop to take pretty and appetizing pictures? Ninjas you are, for sure.

P.P.S. I blame Iowa Girl Eats for makin it look so darn easy and easing me into cooking with this pasta recipe (my only success). Then I got lost in this doozy, only to remember after the fact that I like neither greek yogurt or curry… Therefore I tried to redeem myself with tonight’s catastrophe, stand by to see if I can execute the 2nd half of the recipe tomorrow. Oh yeah, and its a casserole, that takes two days?

Happy cooking everyone. Green things for all. Go buy stock in One-A-Day Gummies. That’s the multi-vitamin I take to offset my horrible eating skillz.

I take one a day gummies too. and i add spinach to everything now – prego pasta sauce, eggs, you name it. but a 2 day casserole, i don’t have time for that shiz. i wish you luck in this endeavor.

i think you could make it in one. but i was so intimidated by the already huge pile of dishes and disaster I had to rest. i don’t know if i’ll ever be able to eat spinach again without seeing it mocking me…

Cooking is hard at first! I have a friend who can’t cook at all and hates how long it takes. I gave her a Hungry Girl recipe book recently. Her recipes are healthy, delicious and easy! Some have only 3 ingredients. You should check her out… great for learning to cook and learning to eat a little healthier!
